Description
These fluffy Yukon gold mashed potatoes make the perfect side dish!
Ingredients

- 8 large Yukon gold potatoes, peeled and quartered
- cold water
- 1/2 cup warm milk (regular, plant-based, half n’ half, cream, or any combo)
- 4 tablespoons butter (vegan butter works great too)
- kosher salt, to taste
- fresh cracked black pepper or white pepper, to taste
Instructions
- Add potatoes to a large pot and cover with cold water by 2 inches.
- Bring to a boil and cook for 15 minutes or until fork-tender.
- Strain potatoes then return to the pot and set on a hot stove – shaking for about 1minute to dry them out a bit.
- Add half of the warm milk, butter, salt, pepper, and mash with a potato masher. Add more milk as needed to get to your desired consistency.
- Adjust seasonings and enjoy!
Notes
- These mashed potatoes are a perfect base recipe. Add roasted garlic, goat cheese, fresh herbs, or any other ingredient you’d like, to create new versions.
