Fun Facts about Yukon Golds:

Yukon Gold potatoes did not come about on their own. In fact, they took over 30 years to develop. In the 1950s, Gary Johnston, a lab technician in the potato development laboratory at Ontario Agriculture College, led a team that cross-bred two potato varieties to make the new type. Yukon Gold potatoes were created by cross-breeding a small Peruvian, deep yellow-fleshed potato with a Norgleam potato, native to North Dakota. The potatoes would not become registered or available until 1980. Well, they were definitely worth the wait. All I can say is thanks, Gary Johnston and team! You hit it out of the park with this one!

Description

These fluffy Yukon gold mashed potatoes make the perfect side dish!


Ingredients

Scale
  • 8 large Yukon gold potatoes, peeled and quartered
  • cold water
  • 1/2 cup warm milk (regular, plant-based, half n’ half, cream, or any combo)
  • 4 tablespoons butter (vegan butter works great too)
  • kosher salt, to taste
  • fresh cracked black pepper or white pepper, to taste

Instructions

  1. Add potatoes to a large pot and cover with cold water by 2 inches.
  2. Bring to a boil and cook for 15 minutes or until fork-tender.
  3. Strain potatoes then return to the pot and set on a hot stove – shaking for about 1minute to dry them out a bit.
  4. Add half of the warm milk, butter, salt, pepper, and mash with a potato masher. Add more milk as needed to get to your desired consistency.
  5. Adjust seasonings and enjoy!

Notes

  • These mashed potatoes are a perfect base recipe. Add roasted garlic, goat cheese, fresh herbs, or any other ingredient you’d like, to create new versions.
